Sometimes I crave something warm for breakfast and toast is usually my go to! I recently discovered sweet potato toast and it’s my new breakfast obsession. You could also make this for lunch or dinner and I love that the options are endless with different toppings.
How to Prepare the Sweet Potato Toast
Wash and dry a sweet potato. Cut off the ends of the sweet potato and thinly slice into about 1/2 inch thick pieces. Brush with a little bit of olive oil and salt and pepper. Place on parchment paper to cook in the oven or place in the Air Fryer
Sweet Potato Toast In The Oven
To make sweet potato toast in the oven, place them on parchment paper with olive oil and salt and pepper and cook them for about 20 minutes at 400 degrees. For crispier, more well done toast, you may want to keep them in the oven for about 25 minutes.
Sweet Potato Toast In the Air Fryer
To cook sweet potato toast in the air fryer, place them in the air fryer basket with olive oil and salt and pepper and cook on 375 for about 15 minutes. Time may vary depending on your air fryer. Feel free to keep them in a little longer if you like a crispier toast.

Sweet Potato Toast Meal Prep
Even if you only want a few slices for breakfast, you can toast up a few extras to have handy for other meals later on in the week. You can pop them in the toaster for a cycle or two to reheat them or warm them up in the microwave.
